Course Brief

The New Zealand Certificate in Cookery (Level 4) programme is designed as an entry into the hospitality industry with an aim of becoming a Professional Chef operating with high standards at the upper level of the industry.

The New Zealand Certificate in Cookery (Level 4) consists of eight modules at level 4 totalling 120 credits. Content covers:

  • Health and safety in a commercial kitchen
  • Standard operating procedures and communication in professional customer focused environments
  • Developing preparation and complex cooking skills across a range of different food types, methods of cooking and presentation.

Graduate Outcome

Graduates of this qualification will be able to:

  • Monitor and maintain health and safety, food safety and security practices to ensure own safety and minimise potential hazards for customers.
  • Monitor and maintain interactions between colleagues, managers and customers.
  • Monitor and maintain the application of standard operating policies and procedures to work roles in a commercial kitchen.
  • Apply cookery skills to prepare, cook and present a range of cold larder dishes employing complex preparation and presentation techniques.
  • Apply cookery skills to prepare, cook and present a range of hot kitchen dishes employing complex preparation and presentation techniques.
  • Apply cookery skills to prepare, cook and present a range of patisserie and desserts employing complex preparation and presentation techniques.

Admission Criteria

For admission to this programme, candidates must:

  • Be at least 18 years of age
  • International students require IELTS 5.5 with no band less than 5.0 (Academic) or the equivalent level of English.

By course completion there are a wide range of cookery and kitchen jobs found in hospitality establishments all across NZ. There are so many different types of food establishments; cafes, wineries, restaurants, family dining, fine dining, establishments in towns, smaller and larger cities.

Hotels and tourism complexes all require staff and as NZ has become an international travelers tourist destination, more places are opening up creating even more employment opportunities.
